the versatile frittata...

For those of you not in the know, according to Wikipedia, a Frittata is:
An egg based dish similar to an omelette or quiche, enriched 
with additional ingredients such as meats, cheeses, vegetables, and pastas.

In my kitchen, a frittata is an egg based dish similar to an omelette or quiche,
enriched with whatever vegetables I need to use up at the moment.

I make frittatas about once a week.
Usually at the end of because that's when my veggies need immediate attention.
The frittata featured on this post is a fairly simple vegetable version.
 I had broccoli, mushrooms, scallions, and tomatoes on hand,
so that's what I used to fill this particular version.
(I would have loved to add some cheese, but well... I ate it beforehand.)

So this is how I get started:
I finely chop onions & scallions.
I coarsely chop mushrooms & broccoli.
I quarter or half grape tomatoes.


In a large bowl, I crack eggs (10 in this case).
I add milk, cream, or half n half (3/4 of a cup in this case).
Really it's whatever's closest to its expiration date.
I whisk the darn thing together and season w/ pepper.


Then the cooking starts.
On high heat I sauté the onions and scallions til it slightly softens and caramelizes.
(I set aside the scallion leaves for later however.)
I then add the mushrooms. (Here a mix of button & crimini.)
I wait a few minutes for the liquid from the mushrooms to evaporate.
I then add the broccoli and allow everything to slightly brown.
And of course, I then season with salt & pepper.
Just a note that I used vegetable oil & butter to sauté. 
The butter for the flavor & the oil to keep the butter from browning.
Because this is a dish you want to transfer out of the pan,
I'm quite liberal with the oil & butter. 
I want to be able to flip the frittata out of the pan later in one piece,
so sticking to the pan is not an option. 
I realize I can use a non-stick pan. In fact I do, but one can never be to sure.


Once the veggies are slightly browned,
I season my egg mixture (with salt this time & a bit more pepper).
I then drop the heat to medium and pour the mixture over the veggies.
I then sprinkle the tomatoes & scallion leaves on top.
If you've got it, this would be the time to add cheese.
At this point it is very important to not stir.
Please do not disturb the magic happening.
Or if you prefer something more scientific,
do not hinder the coagulation of proteins in the pan.

If you haven't yet, because I forgot to mention it earlier,
make sure you're oven is preheated.
I don't have patience, so I set my oven to broil.
If you happen to possess the aforementioned virtue, 
by all means, set your oven to bake.
I'd like to note that by the time I put my frittata in the oven,
it is at least half cooked, with the base set and the top a bit runny.
This is why I set it to broil, I only need the heat source to cook the top.
(See! I've got a method to my madness.)

Once the sides of the egg mixture begin to brown,
transfer the pan into the oven.
If you're oven is set to broil, initially place the pan on the bottom rack.
Otherwise, place it in the middle.
I wait a few minutes to allow the entire mixture to set.
Once the top looks firm, but not browned, 
I transfer the pan to the top rack.
This is when I keep a close eye on the almost frittata.
I like the top browned, but not burned.
It's only a few seconds difference from the former to the latter.


Once the frittata is set and browned,
I take it out of the oven and allow it to cool.
Take my word on this, before attempting to transfer, slice, or whatever,
wait a few minutes, you'll be more successful.
Why you ask?
One, the eggs are still cooking and not completely firm.
Waiting allows it to set completely and therefore more stable.
Two, steam and moisture will form between the bottom 
of the pan and the frittata itself.
Sounds counter-intuitive to let this happen,
but the moisture that forms separates the egg from the pan,
thus allowing you to transfer the frittata with little effort. 

So if you heed my advice, the following should happen with little problems:
Take a plate, place on top of frittata.
Hold pan and plate firmly, flip pan over.
Voilà! The frittata should transfer onto the plate with little effort.
Now, you can leave it as, but I find the top half of the darned thing more presentable.
So take a serving platter, place on top of frittata.
Hold plate and platter together and FLIP!
What you end up with should be something similar to below:


Now I called this post the versatile frittata...
And really, it is. I've made a fairly straightforward vegetable version.
But don't let that limit you. 
Bacon, ham, cheese? Why not!?
Spinach, feta, caramelized onions? Of course!?
Orzo, sun dried tomatoes, pesto? Delicious!
You see where I'm going here? 
Frittatas can be served at any temperature.
So, you can eat it for almost any meal.
I eat it alone for breakfast.
I eat with a side salad for lunch.
I eat with a bit of pasta for dinner.
If you're still in doubt of its versatility,
then I dare you to try for yourself.

this week i've been watching...


Run Fat Boy Run - I love a bit of Simon Pegg & the gorgeous Thandie Newton.
Persopolis - Huge fan of the comic. Finally got around to seeing the film.
Little Voice -  Jane Horrocks is brilliant. I wish I got to see this in the theatre.
My Sassy Girl - One of my favorite films. I cry, laugh & cringe all in one sitting.


  

   

So I'm going to begin posting the movies I watch each week.
I know it seems a bit silly, but now that Netflix has raised their prices,
I might as well make sure I get my money's worth.
Also, this post serves as proof to my friends that I don't spend
all hours watching Doctor Who & Harry Potter on dvd.
Little do they know I do appreciate some variety every now & then.





learning my own way...


The single most important lesson I’ve learned so far is learning how to live life for myself. At nearly 28 years old, this couldn’t have come at a better time. The foolishness of youth is that you’re under the impression that you have a lot of time. But ask anyone over 25 and they’ll be quick to point out just how precious those years truly are. Even more important, they’ll point out just how quickly the time passes. I spent so much of my late teens and majority of my twenties involved and invested in a relationship (the same one in fact). So much so that when that relationship ended, I felt as if I was robbed of the precious time I could have spent getting to know and bettering myself. I didn’t know who I was outside of it, I felt like a shadow of something I didn’t recognize. I was 26 when that relationship ended and I felt more lost than when it started at 17.

I had lost touch with myself over the course of 9 years, the last two of which were so tumultuous that I was in a constant state of stress. I don’t regret the relationship, but if I’m honest, I do regret the last two years of it. Why I stayed and put myself through such a stressful situation, I don’t know. How I managed to stay sane after two years of insanity, I don’t know. I won’t go into details on what went on during that time, but just know that it was an unhealthy situation on my behalf. That I managed to pull myself out of it relatively unscathed (well… maybe it’s too early to call this one, but so far so good at least), is a complete miracle.

That was a little over a year ago, and I’m definitely a completely different person now.  How I feel about life, myself, my friends, my family, and my future has completely changed, and really all for the better.  My post from a few weeks ago definitely sums up my general attitude about life.  It sounds sickly sweet and obtusely happy, but it’s the honest truth.  I absolutely love life and everything it has to offer. Right now I really am living life for myself.  To be honest, the moment I started to do so, everything else sort fell nicely into place. I’ve made the decision to stop eating meat (really not difficult if I’m honest) and because I occasionally do eat seafood, I’m technically a Pescatarian.  I’ve finally purchased a bike (bicycle) so that I can cut down on driving.  I’ve chosen to go back to school to pursue a field of study I would never have considered years ago, but I’m so incredibly passionate about it, just learning about it brings me great joy.   Going back to school full time means that I have little time to work and make money, so I have learned the art of budgeting.  But learning how to live with less has taught me to live with only the things I love. 

If you asked me where my life was going 5 years ago, it would have been to get married and have kids. If you were to ask me that same question today, I would say that I have NO fucking clue, but I would answer that with a smile. You see, the fact that my life can head a million different directions means it’s full of possibility… and that thrills me so much I often get overwhelmed and tear up with joy.  I realize that for some giving up full control of your life maybe scary.  All I know is that I plan on living my life filling it up with things, people and moments I love. So you see it doesn't matter I am in 5 years time, because wherever I end up, it will most definitely be filled with love.

my favourite season...

The autumnal equinox is here! It is officially autumn.
The fall season is by far my favourite season.
I love walking amongst the rust coloured leaves.
I love the crisp and slight chill in the air.
All my coats, scarves & gloves can finally come out of hiding.
Dresses can be worn with tights without looking foolish.
My giant cups of tea, extra hot, will be even more perfect and more comforting.


With the exception of English Peas and Asparagus in the spring,
this is my favourite season for food. 
Squashes, root vegetables, cauliflower, sprouts, grapes, pomegranates,
the warm spices, the warm desserts, the warm drinks.
There is definitely a lot of great food to be eaten.
Let's just hope I can still fit into my coats once I do.

a walk to clear my mind...


Some people might find this odd, 
but I find cemeteries (the older the better) incredibly beautiful.
I love the quiet, the peacefulness, and the history.
If you can get over the eerie aspect of it, it's a great place to clear your head.
It's a great testament to the notion that there is beauty in everything.
Every now and then, when I want to flex my picture taking muscles,
I head to a local cemetery. There's quite a few within a few miles of where I live.
I spend a quiet morning walking around with my dogs and taking a few snaps.
Which is exactly what I did this morning.
And when I was done, I left with a much clearer mind.

autumn wishlist...

Judging by the fallen leaves littered around my doorstep,
fall is already underway.  Luckily, I love autumn.
The colors, the coats, the layers, all the warm spiced drinks. 
I just love it. I absolutely love it.
Out of all the seasons, it's fall I love dressing for the most. 
So to get ready, I've collected a simple wish list of things. 
As a poor peasant student,
I will not get around to buying all these things.
But my birthday IS coming up
and I'm hoping a few charitable, wonderful souls,
better known as friends & family,
will take pity on me and contribute.
I'm planning to post a few of my fall essentials soon....
So I'm hoping by the time I get around to it,
I'd have acquired at least one or two items from this list.
*Fingers crossed*



First up on this list is an ASOS Collegiate Oversized Satchel
that I'm hoping will house books and my computer, especially for travel.
I love really, really love the look & feel of  leather bags.
I can't stand synthetic material trying to pass itself off as leather.
The gorgeous color, size and wallet friendly price,
however, is enough for me to over look that fact.

I love the brand Swedish Hasbeens. 
The gorgeous red colour of this clutch is just absolutely gorgeous.
The simple design is versatile enough
that it will most definitely pair well with many things in my wardrobe.
Did I mention I love the simply perfect gorgeous red shade of this clutch?


I'm a sucker for plaid. Especially plaid coats.
I own about 6 plaid coats. I'd like another 6 more. This is one of them.
I'd like to think the colour palette is neutral enough to justify buying this.



So I was browsing through an Anthropologie store over the weekend.
Big mistake, because I found at least 16 items I didn't need that I'd like to buy.
This particular bag being on top of that list.



Though technically a checkered print and not plaid, 
it's close enough to warrant a spot on my wish list.
Plus it's a cape style coat in a less cliche shape!

















Though not really suitable for fall,
I've been coveting this chiffon blazer since it first came out on ASOS.
It's perfect for light layering, currently on sale, & features a polka dot print.
What's not to like?

Coupled together that fondness just grows exponentially.
These are two I've had my eye on from  ASOS for quite some time.
I mean come on... who can resist a parachute & a poodle print?
Not to mention one sports a Peterpan collar & the other a Pussybow tie?

meetings & questionable multi-tasking...

So here I am sat in my 4th meeting of the day with my laptop in front of me.
Honestly, I tuned out approximately 8 minutes and 18 seconds since it began. 
Which was approximately 14 minutes and 53 seconds ago.
I've still got another 36 minutes and 49 seconds til this thing is bloody over.
IT. CAN. NOT. COME. SOON. ENOUGH.
My day started early with my first meeting at 8am. 
Meaning I had to get out of bed early enough to get ready, take public transport,
swing by ANY cafe (because at 7am, any will do) for a latte, 
and find the building, floor, conference room.
This whole ordeal has proven to me I'm not cut out for a 9-5 work schedule.
I am not a morning person. 
The only time I ever am, is if I haven't slept the night before and still awake.
Though technically that would just make me a dedicated night person
 and not a morning one.
To pass the time, I'm now pretending to take notes by blogging.
Luckily I'm seated in such a way that no one can see the screen on computer.
However in order to keep up appearances,
I have to occasionally glance up, nod my head, and smile.
So this post is really more of a means to amuse me
and occupy my time at the moment rather than post anything of content.
(I say this loosely because other "content" on this blog is highly questionable.)

i have not been able to log on for the past hour. 
i've taken to "pinning" things on Pinterest to pass the time and stave off this insatiable urge to tweet.
work please. work please. work please.

new year resolutions...

Yes you read that correctly. I really meant to say new year's resolutions. I realize the end of 2011 is still a few months away, but I'm not going by the Gregorian calendar here. I'm talking about a "new year" for me... as in my upcoming 28th year on this Earth. I get awfully and annoyingly reflective close to my birthday. I always hope I've somehow bettered myself from the year before and I do get frustrated if I feel like I don't. So this year I'm starting my "resolutions" early to give me an edge for when the day comes I'm no longer 27 years old.
  1. Drink more water- You'd think this is a fairly easy thing to do, but when your instinct is to always reach for a nice cup of tea, remembering to drink water takes an exorbitant amount of conscious effort. 
  2. Walk the dogs- It's not like I don't, I just would like to walk them more. I'm lucky I have a yard that the dogs have access to all day. My dogs being terriers, their output of energy is always high. Not to mention, I probably need the exercise more than they do. 
  3. Eat less carbs- I have an unhealthy, incredibly indulgent relationship with all things carbohydrates. I have yet to come across a form of carbohydrate I don't like. When it comes to eating carbs, it's all or (next to) nothing for me. I do go on a "slow/low" carb diet everyone now and then to kind of detoxify. It's incredibly effective for me due to the fact that I consume an alarming amount of carbohydrates on an hourly basis. That said, it's either I avoid it or stuff my face with it. I need to find a happy medium.
  4. Read! Read! Read!- There was a time when I would devote loads of time for this... but that has been replaced by devoting time to reading tweets on twitter. See the problem here? Hence my next resolution...
  5. Spend less time on Twitter- This should be self explanatory, but I'd like to stress that I really spend way too much time twittering about. It's the first thing I check when I wake up & the last before I go to bed. Incredibly sad, sad fact.
  6. Spend less time on YouTube- This is what keeps me up at night. I decide to watch one thing and the next thing you know three hours have passed, it's 4am,  I've liked 27 videos and I've favorited (is that an actual word?) another 14. Another night spent as an insomniac.
  7. Sleep more- Based on my resolution number 5& 6, it should be pretty clear (or maybe not, which is why I've posted number 7)  that I spend my evenings zoned out in front of the soft glow of either my computer's or my iphone's screens... or worse, both simultaneously. Time ceases to makes sense at this time and with a blink of an eye I go from midnight to sunrise without even thinking about needing sleep. My puffy eyes are proof of this. I average 3-4 hrs of sleep a night, sometimes less, rarely more. 
  8. Put dogs on a schedule- My dogs are spoiled, badly behaved and unpredictable. I try my best to discipline them, but the moment I'm out the door, everyone else at home lets them do whatever they want.  Wait... maybe it's everyone else I should put on a schedule?
  9. Keep focused- Pinterest? Blogger? Instagram? Van Gogh? Catpaint app? Learning more Stephen Sondheim songs on the piano? OKAY. GO!! .... I tend to get caught up in everything that interests me. I'll put everything else off in order to indulge my indulgences. Not good when you're a full time student that ought to devote all their time to being a student.
  10. Keep garden alive- Seems simple enough right? Water, prune, occasionally fertilize. That's it. Well.... when you're nursing a Twitter addiction, a bad YouTube habit and multitude of other distractions, it's quite easy to forget about the plants. It's there, I can do it tomorrow and bam (!!) the plants are dying. Fresh herbs no more. Sadly, I can go from being a plant nurturer to a plant murderer in less time than it takes to enter the passcode for my iphone.
  11. Don't procrastinate- Seriously folks. This is the BANE OF MY F*CKING EXISTENCE. All my bad habits are rooted in this. All my unsuccessful attempts at life have been rooted in this. This needs to go away. This needs to be dealt with and remedied. But I keep f*cking putting it off.
So there you have it. A condensed list of things I'd like to work on. Obviously it's not everything, because there is so much more. But I'd like to begin working on resolution number 10 and that requires I end this here. Of course not without first sharing my new found obsession with my Catpaint App for editing pictures. Definitely the best one dollar I've ever spent.
